Business was admittedly slow at first.

SemSem Mediterranean opened approximately nine months ago in Tinley Park with the vision of offering a healthier alternative of food for the area, according to employee Rawan Khalil.

Khalil refers to the restaurant as a sort of Mediterranean version of Chipotle Mexican Grill, where patrons have build-their-own options for their meal and can see what is going into the selection, since it is prepared directly in front of them.
